Southwest Herb Marinated Flank Steak

I am a huge fan of all cuts of beef and this flank steak leaves nothing to be desired. It is melt in your mouth perfect and as an A1 lover, I was pleasantly surprised when the marinade was flavor enough.  I love flank steak because it is a flavorful cut and if cooked the right way can be as tender as some of the more expensive cuts.  The best part about this recipe is that the steak is cooked in the oven, no need to grill in the winter!

The marinade for this steak I created by accident.  I used a single flank steak, and in a Ziploc bag I added southwest seasoning. You can use any kind of seasoning, I used McCormick’s Southwest.  I then added about 1/4 cup of  low sodium soy sauce, and a generous drizzle of olive oil.  next I seasoned with a little extra salt, pepper, garlic powder, and a few sprigs of fresh rosemary.  I let the flank marinate in the Ziploc at room temperature for a little over an hour.

When I am ready to cook I pre-heat the oven to 390F.  I take the flank out of the bag and slice up about two or three cloves of garlic.  I poke little slits in the flank and stuff the garlic into the slits.

I use a nonstick roasting pan.  I like my steak rare so I cook my flank for two minutes on each side, then remove it from the oven and top it with a pat of butter.  I then tent the steak with foil on a cutting board for ten minutes before slicing.  For medium rare I would probably cook the meat for 3-4 minutes on each side.

Southwest and Herb Flank Steak

Perfect for any night of the week!

INGREDIENTS

1-2lb            Flank Steak

2T                Southwest dry rub

1/4               Low Sodium Soy Sauce

2-3 T           EVOO

1/8tsp         Salt, Pepper, Garlic powder

2-3              Cloves of Garlic

2 Sprigs     Fresh Rosemary

1T               Butter

 

DIRECTIONS

  1. Combine Southwest Seasoning, EVOO, Soy Sauce, Salt, Pepper, Garlic Powder, Rosemary and Flank steak in a Ziploc bag – let marinate for at least an hour at room temp.
  2. Pre-heat oven to 390F. Slice up garlic into thick slices.  Place flank steak on a roasting pan and cut slits into the flank steak, stuffing the slits with the sliced garlic.
  3. Once the oven is preheated, cook the flank steak to your desired temperature – for rare – 2 min on each side, and remove from oven.
  4. Place flank steak on a cutting board and add pat of butter.  Tent the steak with foil and let rest for 10 minutes before carving.
